Wheat industry educates on gluten intolerance
At the Commodity Classic in San Antonio, the Rural Radio Network's Chad Moyer spoke with Paul Penner, the president of the National Association of Wheat Growers. Penner said there are too many situations where people self-diagnose as gluten intolerant.
"Gluten is very important for the immune system," Penner explained, "when it's away from the body for a time, the body has a hard time digesting it when gluten is reintroduced to the body."
Penner also explained there are efforts to educate in the classroom on the importance of gluten intolerance.
