Annual Community Christian School “Enchilada Factory” Takes Over Gym

The gymnasium at Community Christian School in Scottsbluff is in full enchilada factory mode during the school’s largest annual fundraiser.

Volunteers began work on the enchiladas Tuesday morning, and CCS Principal Deirdre Amundsen told KNEB News they will produce 3,000 dozen enchiladas over the course of two days.

Amundsen says the enchilada factory is a tradition that raises a lot of money for their school, and builds fellowship and community within their school and families.

The two day effort got underway just after 8 a.m. Tuesday, and Amundsen said it takes around 40 volunteers throughout the day at all times to complete the 36,000 enchiladas, which she says has been done for nearly 20 years.
